This product is the meeting of two not-so-distant worlds: cheese and koji.

It was by using the whey from the production of mozzarella di buffala in the NANINA workshops, with rice koji and salt, that I created this product through fermentation.

This time nothing comparable.
The same color as soy sauce, the same smell as aged Parmesan. But the comparisons end there.
What happens in the mouth is both incredibly good and simply complex.

    Unpasteurized product, preferably kept cool (+3°C) . However, it can be stored completely at room temperature.

    Keep for one year.

    Allergens: lactose , possible traces of soy, lupin and gluten .
